Celebrate National Ice Cream Sandwich Day with Waco favorite

August 2 is recognized as National Ice Cream Sandwich Day - and what better way to celebrate than with a staple of Waco sweets. 

You've probably seen the truck somewhere in Waco, whether that's parked in front of a popular business or an area event. The red and white Pokey O's truck is hard to miss. 

"We kind of create a daily scavenger hunt at some of the best businesses across Waco, so there's always a chance we'll pop up in your neighborhood," said Austin Meek, co-owner of Pokey O's Waco.

Meeks and his wife Julia began the Pokey O's Waco venture in 2015. The original store, located in Dallas and owned by Len and Kathy Oszustowicz, opened its doors in 2006. Julia was one of the first employees. After getting permission to operate a mobile version of the business, the Meeks brought the business to Waco. 

Now, the ice cream sandwich you'll find at the Pokey O's truck isn't just your average sandwich. The cookies are made fresh from cookie dough made in Dallas. The ice cream that comes between the cookies is a Texas favorite, Blue Bell! The sandwich is the namesake, called a Pokey O. 

"We've ordered more ice cream through seven months of this year than we did all of 2016," said Meek. "We're so grateful for Waco's embrace and are excited to keep more bellies full as we continue to grow." 

The most popular cookie-ice cream combination?  The classic chocolate chip cookies with vanilla ice cream. Second place goes to snickerdoodle cookies with cookies n' cream, according to Meek. 

Above all, community plays a big part in operating the business.

Not only will you find the truck parked in front of a popular business in the area, but it's also parked at local events, such as fundraisers. Recently, Pokey O's partnered with the Hewitt Police Department to raise money for the Advocacy Center, an organization that helps victims of abuse receive help and counseling.

On National Ice Cream Sandwich Day, you can find them outside of Dichotomy in the afternoon and Barnett's Pub in the evening "celebrating the holiday with the most delicious ice cream sandwiches on the planet!"
