Celebrate National Gumbo Day with a Central Texas favorite

Oct. 12 is National Gumbo Day and what better way to celebrate than with a bowl from a CTX favorite.

Cajun Craft, located on the corner of 11th Street and Clay Avenue near downtown Waco, brings endless flavor to the city's food scene. 

Kim Bui, the owner of Cajun Craft, took over the location in May of 2016, formerly known to the area as Krispy's Chicken. 

Bui's family, from the south Texas coastal city of Rockport, brought the influence and love of Cajun food to the table. 

"We do put a lot of love in our food," said Bui. 

Among the menu of seafood delicacies, sausage and of course, fried chicken, gumbo proves to be a standout to customers in the area and beyond. 

"We solely like to focus on traditional gumbo. I know there are things like Tex-Mex, Cajun Tex-Mex, but we really try to [focus] on traditional," said Bui. 

And tradition is a hit among Cajun Craft's customers.

"It starts off with a dark roux," explains Bui. "What we have [at Cajun Craft] is chicken and sausage gumbo. We do add okra n ours and also, to make gumbo, you have to [use] the "holy trinity" which is celery, bell pepper and onion." 

The bowl is also served with rice in the gumbo and crackers on the side.

A batch of gumbo takes about two hours to make. Rich in flavor, customers keep coming back for more.

"Our customers love it, even customers from Louisiana love it, they give us the a-ok," laughs Bui. 

For those still in doubt of whether or not to try Cajun Craft's gumbo, you can expect only the best ingredients. 

"We marinate our own chicken in-house, that chicken is what we use to put in our gumbo," said Bui. "It's fully flavored chicken that goes in there."
